The small peel is used:
– to spin the pizza into the oven in order to get a uniform cooking
– to check the cooking, avoiding the bottom side burns
– to take the pizza out of the oven as soon as it is ready
The head of the peel is smaller than the pizza size in order to spin it easily; moreover, the cooked pizza is rigid enough to be taken out of the oven even if the peel surface is small. The handle lenght should be based on the oven depht.
